How to make stuffed peppers in a slow cooker

Peppers are so great for stuffing. You can stuff them with anything you like really. From all sorts of meats, grains, cheeses and other veggies! In the recipe below we make a stuffing using only 5 simple ingredients. I like to use ready made marina but you can always use regular tomato sauce if you like.
We start of by first sautéing onions and garlic to build flavor. Then we add in ground beef and drain off any of the excess grease. From there we add in cooked rice and mix in marinara sauce. This slightly simmers for a few minutes to bring everything together. This mixture is then used to stuff the peppers topped with mozzarella cheese then into the slow cooker it goes.
1 tablespoon vegetable or olive oil
1 medium sized onion small diced
4 cloves garlic minced
1 pound ground beef
2 cups cooked rice
1½ cups marinara or tomato sauce
6 bell pepper tops cut off and seeds removed
1 cup shredded mozzarella cheese
Put a large saute pan on medium high heat. Add in oil. When oil is hot add in onions and garlic and cook until tender.
When onions are tender add in beef. Saute until all the meat is browned then drain any excess grease.
Add in rice and marinara/tomato sauce allow to simmer for a few minutes.
Stuff each bell pepper with the beef mixture and place upright into a 6 quart slow cooker. Top each pepper with mozzarella then place upright into slow cooker.
Cook on high for 3 hours and serve warm.
