Oatmeal Toffee Cookies

Again, with another oatmeal cookies recipe! This time I’m using almond toffee bits to add that nice flavor of almonds. Check out the recipe.

You’ll need:
1 cup of old fashioned rolled oats.¼ tsp of salt.¼ cup of softened butter.1 large egg.3.4 ounces of all purpose flour.½ tsp of baking soda.¾ cup of packed brown sugar.1 tsp of vanilla extract.⅓ cup of almond toffee bits.Cooking spray.

How to:
In a medium bowl, mix together the flour, oats, baking soda and salt until well combined.
In a large bowl, beat the sugar and butter together for 5 minutes using a mixer at medium speed. Mix in the vanilla and egg until well combined then add the flour mixture and beat to combine. Fold in the toffee bits and stir.
On 2 baking sheets coated with cooking spray, drop the dough by tablespoonfuls 2 inches apart.
In a preheated oven to 350° bake for 11 minutes and let cook completely before serving.
Voila!
Simple, easy and sweet! My husband loves almonds, so when I make these oatmeal toffee cookies, is so happy he can have them all for himself! Give it a shot and let me know what you think.
