Blueberry Walnut Oatmeal Cookies

Rather for breakfast or snack, these blueberry walnut oatmeal cookies are a must-try! They super easy to prepare, sweet and crunchy! Check out how I make them.

You’ll Need:
1 tsp of baking soda.½ cup of ⅓ less-fat softened cream cheese.¾ cup of packed light brown sugar.1 large egg.2 ½ cups of regular oats.1 cup of chopped walnuts.1 ½ cups of all purpose flour.½ tsp of salt.6 tbsps of softened unsalted butter.½ cup of granulated sugar.2 tsps of vanilla extract.1 cup of dried blueberries.

How to:
Mix the flour with baking soda and salt in a bowl.
Using a mixer at medium speed, beat the cream cheese and butter together until fluffy. Then mix in the sugars until well combined.
Mix in the egg and vanilla until well combined.
Add the flour mixture to wet mixture gradually and mix until well combined then stir in the oats, blueberries and walnuts.
On baking sheets, drop the dough by tablespoonfuls 2 inches apart.
In a preheated oven to 350° bake for 10 minutes and let cool completely before serving.
Voila!
Easy, peasy and crunchy! My kids love taking these to school, and they always ask for extra to give some to their friends. Try them and let me know what you think.
