Cooking time:

Prep Time: 45 minutes
Cook Time: 10 minutes
Total Time: 55 minutes
Servings: 12 slices

Ingredients:

For the Cake:

  • 3 eggs
  • 2/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons ground cinnamon
  • 3/4 cup all-purpose flour
  • 2 cups shredded carrots (about 2 medium carrots)
  • Powdered sugar (for rolling)

For the Filling:

  • 6 ounces cream cheese (room temperature)
  • 4 tablespoons butter (room temperature)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Powdered sugar (for dusting)

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a jelly roll pan (10×15 inches) with foil and coat it with cooking spray.
  2. In a mixing bowl, beat eggs quickly for 5 minutes until frothy and yellow. Add sugar and vanilla extract and continue beating until combined.
  3. whisk together salt, baking powder, ginger, nutmeg, cinnamon, and flour in a separate bowl. Stir this mixture into the wet ingredients until well blended. Fold in the shredded carrots.
  4. Spread the batter evenly in the prepared pan. Bake for 9-11 minutes until the cake is set and lightly browned. Remove from the oven.
  5. While baking the cake, lay a clean kitchen towel on a flat surface and sprinkle it generously with powdered sugar.
  6. Immediately invert the hot cake onto the sugared towel. Carefully peel off the foil. Starting at the short end, roll the cake tightly with the towel. Let it cool completely while rolling for about 1 hour.
  7. Meanwhile, prepare the filling by beating cream cheese and butter until smooth. Add powdered sugar and vanilla extract, and beat until creamy.
  8. Once the cake is cooled, carefully unroll it from the towel. Spread the cream cheese filling evenly over the cake, leaving a border around the edges.
  9. Roll the cake back up tightly without the towel, peeling it away as you roll. Wrap the rolled cake in plastic wrap and chill for 30 minutes to 1 hour to firm up the filling.
  10. Before serving, dust the cake roll with powdered sugar. Slice and enjoy!

Note: You can freeze the cake roll for up to one month. Sprinkle with powdered sugar before serving.

Frequently Asked Questions (FAQ)

1. Can I use pre-shredded carrots instead of shredding them myself?

While pre-shredded carrots are convenient, it’s best to use freshly shredded carrots for this recipe. They have a better texture and flavor.

2. Can I make the cake roll ahead of time?

Yes, you can. You can freeze it for up to one month. Just be sure to sprinkle it with powdered sugar before serving.

3. What if my cake cracks when I roll it?

If your cake cracks during rolling, don’t worry! Paste the cracks together with frosting and then frost the entire outside of the roll for a smooth finish.

4. Can I add nuts or raisins to the filling?

Absolutely! If you enjoy nuts in your carrot cake, add 1/2 to 1 cup of toasted walnuts or pecans to the cream cheese filling before rolling. You can also add raisins if desired.

5. How do I ensure my cake is spongey and not too dense?

Beat the eggs for a full 5 minutes until frothy and dark yellow. This step is crucial for achieving a light and spongey texture.

6. Can I use a different-sized pan if I don’t have a jelly roll pan?

It’s best to use a jelly roll pan (10×15 inches) for this recipe to achieve the correct thickness for rolling. Using a different-sized pan may result in a cake that is too thick or thin for rolling.

This Carrot Cake Roll is a delightful spring dessert that combines the flavors of traditional carrot cake with a creamy cream cheese filling. Enjoy!

Easter Nest Cupcakes Recipe

Welcome to our Easter Nest Cupcakes recipe guide! In this article, we’ll share some helpful tips and information to ensure your cupcakes turn out perfectly. From ingredient tips to equipment recommendations, we’ve got you covered. Let’s get started on creating delicious and festive Easter treats!

Ingredient Tips & Equipment Information:

  1. Ensure all your ingredients, especially butter and eggs, are at room temperature before baking.
  2. Use a baking spread for the cupcakes and unsalted butter for the buttercream.
  3. If you don’t have a grass piping nozzle (Wilton 233), a small open star nozzle can achieve a similar effect.
  4. Feel free to use any color cupcake cases, but matching pastel shades to Mini Eggs can add a charming touch.
  5. While we provide cup measurements, using digital kitchen scales for precise weighing is highly recommended.
  6. Use measuring spoons for teaspoon (tsp) and tablespoon (tbsp) measurements, not regular eating spoons, for accuracy.

How to Make Easter Nest Cupcakes:

  1. Begin by mixing baking spread and caster sugar in a bowl (or stand mixer) until creamy, about 5 minutes. Add eggs and vanilla, mixing until fully combined.
  2. Gently fold in self-raising flour until just incorporated. Divide the batter among cupcake cases and bake at 350°F (175°C) for 25-30 minutes or until golden and a skewer comes out clean.
  3. Let cupcakes cool completely on a rack. For the buttercream, mix softened butter until smooth, then add icing sugar, cocoa powder, milk, and vanilla. Mix until smooth.
  4. Pipe buttercream onto cupcakes using a grass nozzle, then top with three Mini Eggs for decoration.

Frequently Asked Questions (FAQs):

1- Can I use different frosting flavors for these cupcakes?

Absolutely! Feel free to experiment with different frosting flavors like lemon, strawberry, or cream cheese to suit your taste preferences.

2- Can I make these cupcakes ahead of time?

Yes, you can bake the cupcakes in advance and store them in an airtight container. Frost them closer to serving time for the best taste and texture.

3- What’s the cooking time for the cupcakes?

Bake the cupcakes at 350°F (175°C) for 25-30 minutes or until they are lightly golden and a skewer inserted into the center comes out clean.

Pistachio Cream Pie: Your Next No-Bake Favorite Treat

I love pistachios. They’re scrumptious nuts that are awesome to eat on their own or in combination with my other favorite foods. I occasionally add pistachios to salad whenever I can. And I especially love pistachios in desserts. This pistachio cream pie is one of my new pistachio favorites.

Aside from the yummy pistachio flavor, this pie is a light, creamy, and refreshing dessert. Best of all, you only need ten minutes to prep this pie, and it doesn’t need baking at all. It’s so dreamy. Check out the recipe.

This pistachio cream pie is a light and creamy treat to enjoy with your family and friends. But if you’re like me, I’m likely to hoard this pie all to myself. What you’ll get with this recipe is pie on a graham cracker crust filled with a mix of cream cheese, instant pistachio pudding, milk, whipped cream, sugar, and crushed pineapple. To emphasize the pistachio flavor, you can garnish this pie with chopped pistachios before serving. This pie requires very little effort and it’s very delicious too. This scrumptious recipe is from Alyssa of The Recipe Critic.

Ingredients:

1 package (8 ounces) cream cheese, softened
1 cup milk
2 cups heavy whipping cream
1 package (3.4 ounces) instant pistachio pudding mix

Ham and Cheese Sliders

If you’re in need of an easy comfort-food recipe for tailgating, holiday parties or events, or an after-school snack that everyone loves, this will do the trick.

Baked juicy ham and Swiss cheese nestled in soft, sweet Hawaiian rolls with a buttery Dijon, onion, and poppy seed topping.

Hawaiian bread is one of my all-time favorite kinds of bread and it’s absolutely perfect for the sliders.

It stays soft and tender in the interior and while the base of the sliders have an ever-so-slight crispiness from the buttery mixture that drips down during baking.

There’s flavor galore from the juicy ham, savory cheese, sharp Dijon mustard, poppy seeds, dried onions, and Worcesteshire sauce.

Classic Traditional Thanksgiving Stuffing

My family are stuffing fanatics. Of all the Thanksgiving sides, it’s the most popular by far.

They were in stuffing heaven with this classic version and literally stuffed themselves.

Technically it’s dressing because it’s not stuffed inside the bird, but we still call it stuffing rather than dressing. Our age old mis-naming tradition.

My family likes stuffing that’s classic and traditional. No sausage and pear, dried fruit and nut, wild mushrooms, or even bacon or sausage need apply. Think old-fashioned.

Filling Up On Fruits And Vegetables

With various nutrition recommendations flooding the media, finding an appropriate diet regimen can be a daunting task. However, one fact has remained abundantly clear since the early days in the field of nutrition science: the more fruits and vegetables a person eats, the better. Many nutrition experts recommend consuming five to nine servings of fruits and vegetables every single day. This may seem like a nearly impossible feat, but some simple guidelines can make meeting the requirement of these nutritionally dense superfoods less intimidating.

Changing Behavior

The first step to increasing intake of fruits and vegetables is to establish a goal. This goal should be reasonable and individualized to one’s own preferences in order to encourage successful outcomes. Nutrition experts recommend consuming five to nine servings of fruits and vegetables every day. However, meeting this requirement may be too ambitious for people who currently only get one or two servings per day. In this case, it is much better to start small and work up to the recommendation than to dream big and fall short. Start with an attainable and specific goal. This can be anything from aiming to pack a vegetable snack for lunch daily to deciding to pick up a new kind of fruit each week at the grocery store.

Next, use psychology as a tool for increasing daily consumption of fruits and vegetables by utilizing a fruit bowl. Prepare a bowl of different fruits at the beginning of each week and make them easily accessible on the kitchen counter. This technique encourages choosing fruit as a healthy snack due to the fact that they are simply more visible and accessible. Any variety of fruits can be chosen to include in a fruit bowl, but items like bananas, apples, and oranges are typically selected for familiarity. This technique can also be applied with vegetables by slicing up some carrot or celery sticks and leaving them on the kitchen table for a between meal snack. Pairing them with a side of a greek yogurt vegetable dip is a great way to optimize their appeal. The key here is to prepare for success by planning ahead and making a healthy snack the obvious choice.

Sweet Potato Casserole with Butter Pecan Crumble Topping

I love sweet potatoes and have a ton of recipes using them from bread to enchiladas but I was missing a classic: sweet potato casserole.

It was about time I made it and we loved every bite because this isn’t just any ole sweet potato casserole. The crunchy butter pecan crumble topping really sets it apart.

It’s an easy recipe to make and preassemble before baking it off especially if you’re cooking it for a holiday meal like Thanksgiving or Christmas Eve dinner.

When cooking a holiday meal it’s so helpful to have as many things in the ‘ready to pop into the oven’ stage as possible and this is one of those dishes. I’d prep it the night before, cover, and refrigerate if you’re planning on prepping in advance.

Farm Country Tater Tot Breakfast Casserole – Classic Crock Pottin’!

I love breakfast casseroles.

Either of those options is more than fine with me!

My husband loves tater tots.  Now, I mean LOVES tater tots.  He would like me to include them in every breakfast meal he can get.  He also likes me to serve them as a side with burgers.  Weird?  Sure, but totally delicious in his opinion!  Tater tot casserole is a great way to get a good filling breakfast into your belly (and your family’s) without taking too much time.

Prepare to Be Addicted to These Jamaican Beef Hand Pies

Lately I’ve been looking for new snacks to serve on game days. Sure, I could always turn to our old favorites, but I just didn’t feel like eating nachos or chili or chicken wings. So off to the internet I go for inspiration and found these Jamaican beef hand pies.

These hand pies are just amazing. They’re meaty and spicy, just the way I love them. They’re also so addictive that I didn’t notice I downed half a dozen of them until my granddaughter asked if there was any more. Try these hand pies at home and see if you don’t become addicted to them too.

COWBOY CAVIAR

A fresh, simple dip that can be thrown together in under 15 minutes!

This Cowboy Caviar makes a great side dish for any picnic, potluck, or party, and is a great way to use up your summer produce!

I tried cowboy caviar for the first time at a potluck last summer and was instantly obsessed.

I didn’t expect it from this unassuming, summery dip that at first glance I confused with chunky salsa or pico de gallo, but one bite and I knew that I was hooked for life.

The saltiness of the chips combined with the freshness of the tomatoes, the crispness of the pepper, the subtle heat of the jalapeno, the faint hint of lime and garlic…. It was heaven.

The Best Baked Brie with Balsamic Cherries

I love appetizers so much. I’d rather have them than entrees.

And of all appetizers, baked brie is my absolute favorite. And this is the best baked brie.

Quite a claim, but it’s that good.

It’s such a simple recipe with just three ingredients, but it’s amazing how satisfying, comforting, and just face-stuffing worthy it is.

It pairs salty-and-sweet, with smooth and creamy. Throw in the texture and chewiness from the cherries, and served on top of crunchy crackers, it’s a total slam dunk.

It’s ready in less than 15 minutes, making it the perfect last-minute party appetizer.

Green Bean Casserole is a classic side dish, great for special occasions like Thanksgiving or Christmas, yet still perfect any time of year!

This recipe features fresh green beans cooked until tender crisp in a creamy mushroom sauce with fried onions and of course cheese.

The perfect green bean casserole!

My family looks forward to this fabulous side dish every year! Tender green beans cooked in a creamy mushroom sauce and topped with crispy fried onions and cheddar cheese; so many family favorites ingredients all put together in one dish!

I do love a classic green bean casserole (with canned beans) but growing up my mom always made green bean casserole with fresh beans so that’s the way I make it too.

Blueberry Dutch baby Pancakes – They Aren’t Your Average Breakfast Food

Are you a big breakfast eater?

I tend to enjoy breakfast but I don’t really care for things like waffles, pancakes, and French toast. I know, I’m weird. I just prefer eggs, bacon, and fried potatoes over the sweet stuff. However, there was this one time I was introduced to Dutch blueberry pancakes and I made an exception. I could not believe how amazing these pancakes tasted and they were made in such a unique way.

After enjoying them for the first time I was resolved to sharing this deliciousness with the world. So, at my church’s annual women’s retreat we decided to make Dutch blueberry pancakes to feed to the masses. Wowser! The ladies who attended the retreat couldn’t stop raving about how good they were!
