How to make slow cooker sweet potato mash

Mash potatoes are a staple in almost all American households. Sweet potatoes are usually reserved for pies around the holidays. With this recipe we let the savory side of the sweet potatoes shine.
Sweet potatoes naturally have a beautiful sweetness to them, known as nature’s candy for their ability to produce a caramel like syrup when cooked. We pair that sweetest with the robust taste of garlic and herbs. Then add cream cheese and parmesan to smooth it all out with a creaminess that’ll be difficult to forget.

3 HOURS 10 MINUTES
2 pounds sweet potatoes peeled and quartered
5 cloves garlic minced
1 teaspoon fresh or dry thyme finely chopped
2 tablespoons butter
1 teaspoon salt
½ teaspoon pepper
½ cup cream cheese
1 cup freshly grated parmesan cheese
Add all ingredients from sweet potatoes to pepper into a 6 quart slow cooker.
Cook in high for 3 hours.
Using a masher or a fork mash sweet potatoes until fluffy. Add in cream cheese and parmesan then mix well.
Serve as a side to any of your favorite main dishes.
