We take carrots for granted, what an amazing vegetable it is. In the recipe below we add just a few ingredients to really let this beautiful veggie shine. I’ve always loved eating carrots, even as a child, I would constantly just eat them right out the fridge and my grandma would yell at me that I needed to wash them first!
What I love about this recipe is the glaze using orange marmalade. It adds just the perfect sweetness without over powering the carrots. The fresh herbs liven up this recipe turning it into a sweet, savory aromatic dish that will make a great match to any main entree.
Ingredients:
1 cup orange marmalade
⅓ cup water
5 garlic cloves minced
3-4 sprigs of fresh thyme
1 teaspoon salt
¼ teaspoon pepper
2-3 pounds whole carrots peeled leave green tops on
Direction:
In a 6 quart slow cooker add in everything from marmalade to pepper and mix well.
Add in carrots and using tongs or your hands mix in the carrots so they are all evenly coated in the marmalade mixture.
Cook on high for 3 hours.
Remove sprigs of thyme and discard. Coat carrots in sauce and serve along side your main entree or as is.
