INGREDIENTS:
- 2 oz (these were 1 oz each) sliced whole grain bread, toasted
- 2 tbsp hummus
- 6 thin cucumber slices
- 1 small radish, sliced thin
- 1 oz avocado, sliced thin (from 1/4 small haas)
- crushed red pepper flakes, to taste
- 1/8 tsp kosher salt
- black pepper, to taste
- 1/4 cup baby arugula
- 1 wedge fresh lemon
