HUMMUS AVOCADO TOAST

INGREDIENTS:

  • 2 oz (these were 1 oz each) sliced whole grain bread, toasted
  • 2 tbsp hummus
  • 6 thin cucumber slices
  • 1 small radish, sliced thin
  • 1 oz avocado, sliced thin (from 1/4 small haas)
  • crushed red pepper flakes, to taste
  • 1/8 tsp kosher salt
  • black pepper, to taste
  • 1/4 cup baby arugula
  • 1 wedge fresh lemon
