1 Mins read

I love salads so much, I can have them for lunch! These greek slaw chicken pitas are delicious and crunchy. Check out how I make them.

You’ll need:
1 ½ tbsps of canola oil.¼ tsp of kosher salt.3 cups of very thinly sliced green cabbage.2 ounces of crumbled feta cheese.4 ounces of thinly sliced skinless, boneless rotisserie chicken thigh.8 ounces of thinly sliced skinless, boneless rotisserie chicken breast.3 tbsps of fresh lemon juice.½ tsp of freshly ground black pepper.½ cup of thinly sliced green onions.4 (6 inch) whole wheat pitas cut in half.

How to:
In a medium bowl, mix together the lemon juice, canola oil, ground black pepper and kosher salt until well combined then add in the cabbage, onions and cheese and toss to coat.
Now, divide the chicken among the pita halves and spoon ½ cpu of slaw into each one and Enjoy!
Easy, peasy and crunchy! Chicken has always been my favorite, so when I make salads with chicken, it’s a dream coming true! Give this one a shot and let me know what you think.
