If you are looking for a simple, easy and delicious entrée, you should definitely try this parmesan chicken rice. It’s so delicious, you have to try it!
You’ll Need:
½ cup of chopped onion.½ tsp of dried thyme.¾ pound of skinless, boneless chicken breast cut into bite sized pieces.½ tsp of salt.1 cup of uncooked instant rice.½ cup of grated fresh parmesan cheese.1 tbsp of olive oil.1 tsp of bottled minced garlic.1 package of pre sliced mushrooms (8 ounces).½ cup of dry white wine.¼ tsp of freshly ground black pepper.1 cup of fat free less sodium chicken broth.¼ cup of chopped fresh parsley.
How to:
Over medium-high heat, heat the oil in a large nonstick skillet and sauté the onion, garlic, thyme, and mushrooms for 5 minutes.
Mix in the chicken and sauté for 4 more minutes then add the wine, salt and pepper and cook for 3 minutes.
Mix in the rice and broth and bring to a boil. Reduce the heat and simmer covered for 5 minutes then stir in the cheese and parsley.
