Coconut Shrimp with Tangy Greek Yogurt Sauce

This coconut shrimp is like candy. Pretty much the entire batch I made was gone by the end of the night. It’s sweet and crunchy, and the Greek yogurt sauce just balances the flavors out really nicely. And best of all, this is all lactose free (I recently discovered that yogurt is usually okay for people with a lactose intolerance…yay!) It does take a little bit of time to prepare, and several different steps, but it’s so worth it.

Coconut Shrimp with Tangy Greek Yogurt Sauce

Ingredients

  • Coconut Shrimp
  • 1 pound shrimp, deveined and deshelled
  • 1½ cup flour
  • Fry batter mix (1 cup flour, ½ cup corn meal, 2 teaspoons baking soda, 1 tsp salt, 1 tsp pepper, 1 tsp red pepper flakes, all mixed together)
  • 1 can coconut milk
  • ½ bag shredded coconut flakes (about 8 ounces)
  • Coconut Oil for frying

  • 1 lime, zested and juiced

My family loves pecan pie. Even though a lot of people associate pecan pies with autumn and winter, we love making it whenever we can regardless of the season. We also like to experiment with the classic recipe and add ingredients to make the pie more interesting. One of those discoveries is this island pecan pie.

This particular pecan pie recipe is still the same old pecan pie with one slight difference: the pie filling has crushed pineapples and coconut flakes. The difference may be slight, but the impact is amazing. It gives the traditional pie a sweet and refreshing tropical touch.

Amish Kitchen Wisdom: Make Hamburger Soup When The Weather Gets Colder

Growing up on the farm without a lot of money, Mom learned how to cook like Grandma.

They had plenty of ways to make something out of nothing. Some recipes were handed down through the generations and others they got from friends and neighbors. My grandparents just happened to live on the same road as a nice Amish family. They would often visit one another, swap foods for services, and share stories and recipes.

One of the recipes that Grandma got from that family was Friendship soup. Seemed fitting seeings as they really were friends. I remember eating it all the time when I was younger. When I found the same recipe on Recipe Lion, I couldn’t wait to try it out for myself at home.

Chocolate Mint Cake: A Cool Cake for Choco-Mint Lovers

My mother is an adventurous cook and loves experimenting with flavors. But when it comes to chocolate, there are only two kinds in her book: milk chocolate and dark chocolate. So, growing up, I wasn’t exposed to anything else. When I was in high school, though, a friend introduced me to the chocolate-mint flavor combination. I fell hard at first bite and am still in love decades later. I can get crazy over anything that has chocolate and mint in it. And when I found this recipe for chocolate mint cake, you can guess how eager I was to make it.

This cake is fantastic beyond words. It’s a layered chocolate cake with mint-buttercream frosting and topped with chocolate ganache. I can’t write about this cake without drooling and dreaming of the next time I get to enjoy a slice (or three). If you love the chocolate-mint flavor combination, this is a cake that you must try.

This chocolate mint cake is exquisite. The recipe calls for a chocolate cake mix, and I find that extremely convenient. But if you’re a stickler for traditionally made chocolate cake batter, then go for it. The cake is made in layers, and each layer is frosted with buttercream flavored with peppermint extract. Green food coloring makes the frosting’s color more intense and underscores its mint flavor. The chocolate ganache topping this cake also has peppermint extract, and that’s just divine. Better-Than-Takeout Cashew Chicken

I’ve shared many peanut chicken recipes but never one for cashew chicken.

I don’t know what I was waiting for because this dish is easy, ready in 20 minutes, and loaded with flavor and so much texture from the vegetables and cashews.

It tastes as good as the cashew chicken you’d get at your favorite Asian restaurant. Actually it’s better. Not that I’m partial or anything.

The chicken is sautéed with sesame oil for depth of flavor before adding broccoli, red bell peppers, edamame, and garlic. The vegetables stay crisp-tender which is exactly the way I like them. If you prefer green bell peppers or other vegetables, mix and match as you see fit.

The dish is finished with cashews of course and a wonderful sauce that’s made with soy sauce, honey, rice wine vinegar, ginger, and Asian chili garlic sauce. It’s kept in the Asian section of my regular grocery store.

The second I spot eggnog lining the grocery store shelves on November 1st, I giddily purchase my first carton, and buy it all through New Years because, eggnog = a mug of holiday cheer.

Now if you are looking for more holiday cheer, and equally important, the most delicious cookie you will make all season long, then get giddy for these crazy soft and chewy eggnog flavored cookies!

INGREDIENTS:

EGGNOG COOKIES
2 1/2 cups all purpose flour
2 1/2 teaspoons baking powder
3/4 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon cream of tartar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
16 tablespoon unsalted butter, softened*
1 cup brown sugar
1/2 cup granulated sugar
1 oz cream cheese, softened*
1 egg
2 large hard cooked egg yolks, pressed through fine mesh strainer
2 teaspoons vanilla extract
1/3 cup eggnog

EGGNOG CREAM CHEESE FROSTING
4 tablespoons unsalted butter, softened*
2 1/4 cups powdered sugar, divided
4 oz. softened cream cheese cut into 8 pieces*
1 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1 tablespoon eggnog

DIRECTIONS:

COOKIES
Preheat oven to 350 degrees F. Line baking sheets with parchment paper or nonstick liner and set aside.
In a large bowl, whisk together the flour, baking powder, nutmeg, salt, cream of tartar, ground cinnamon, ground cloves and ground ginger. Set aside.
Using a stand mixer fitted with the paddle attachment, beat butter, sugars and cream cheese until light and fluffy, 2-3 minutes.
Beat in whole egg just until combined. Add egg yolks, vanilla extract and eggnog and beat just until combined.
With mixer on low, slowly add flour mixture and beat just until combined– don’t overmix!

Drop dough by the heaping tablespoon at least 3 inches apart on prepared baking sheets, about 6/sheet (you will need to use a cookie scoop as dough is very wet/sticky). Bake 12-15 minutes or until tops are set. Let cool for 3 minutes then transfer cookies to a wire rack to cool completely before frosting.

EGGNOG CREAM CHEESE FROSTING
Beat butter and 1 1/2 cups powdered sugar with handled mixer at medium-high speed until creamed together and light and fluffy, about 2-3 minutes. Add cream cheese, 1 piece at a time, beating thoroughly after each addition.
Add vanilla, ground nutmeg, ground cinnamon and eggnog and beat to combine. Beat in remaining powdered sugar. Add additional eggnog, if needed, a teaspoon at a time to reach desired consistency.
Evenly spread frosting on cooled cookies. Garnish cookies with crushed candy canes or ground nutmeg if desired.
NOTES:
*Do NOT microwave butter or cream cheese. Allow to soften at room temperature.

French Toast 4 Ways

Ingredients

For all:
Egg wash
4 eggs
1 cup milk
1 tbsp. Vanilla
1 tbsp. Cinnamon

Instructions:
1. Wisk all ingredients together in medium-large bowl to create egg wash

4 slices sandwich bread
2 cups blueberries, raspberries, and blackberries
2 tbsp. lemon juice
⅓ cup granulated sugar
Confectioners sugar (for garnish)

Instructions
1. Mix berries, sugar, and lemon juice in medium pan over low heat crushing and stirring 2. berries until they form a thick sauce
3. Dunk bread in egg wash,
4. Melt butter in a skillet on medium-low heat and cook bread for 2-3 minutes

Every Sunday of my childhood, my mom and dad would always make cinnamon rolls for breakfast.

Sometimes they were homemade, other times they were out of a can. Either way, they kept up this tradition pretty much our entire childhood…and I think they still do it to this day. Those days that we had the store-bought cinnamon rolls they were good, but they were never as good as the homemade versions.

I think that sometimes they skimped a little because it was just so much easier and faster. After I found this recipe on The Girl Who Ate Everything, I started to think that if they would have known how simple a cinnamon roll cake was, we would have probably been having that instead.

Easy Slow Cooker Baked Ziti – It’s REALLY CHEESY!

This baked ziti is so much better than the original types of recipes.  Made in the crockpot, it simmers and becomes the perfect texture over a long period of time. Mom told me my kids would love this baked ziti and that it was super easy to make. She is so right!  This baked ziti comes together on all it’s own with a great depth of flavor, even though you barely have to do anything to prep it.  No chopping and dicing?  That’s my kind of meal!

Bacon Cheeseburger Pie: A Fun and Playful Kid-Friendly Meal

I’ve heard a lot of parents complain about how picky and hard to feed their kids are. I have to say that some of my kids and grandkids were picky when they were still young, but I seldom had trouble feeding them. And it’s not because I only feed them what they want all the time. I think you just have to make dinner more fun for them to eat. This bacon cheeseburger pie is one of the fun foods I recently found that my grandchildren loved.

My grandkids all love bacon cheeseburgers. To make them eat this pie, I only had to tell them that it’s their favorite food in a different form, since it really is that. Here Are Four Ways To Make Incredibly Beautiful Desserts With Puff Pastry

Cream Cheese Filling

INGREDIENTS
1 8-oz block cream cheese

¼ cup granulated sugar

½ tsp vanilla extract

PREPARATION
In a medium bowl, mix cream cheese, sugar, and vanilla until smooth.

Strawberry Pastry Diamond
Makes 9 pastries

INGREDIENTS
1 sheet thawed puff pastry

5 strawberries, halved with stems removed

9 Tbsp. cream cheese filling, recipe above

powdered sugar

PREPARATION
Preheat oven to 400°F.

Cut the puff pastry into 9 equal squares.

Taking one of the squares, fold one of the edges to the opposite edge.

Leaving a ½-centimeter border, cut about ¾ of the way from the bottom of the triangle to the tip on both sides, making sure the cuts do not touch.

Unfold the square.

Taking the top flap, fold it toward the 2 cuts near the bottom.

Take the bottom flap and fold it toward the top edge.

Place about a tablespoon of the cream cheese filling in the middle, then place a strawberry half on top.

Repeat with the remaining pastry squares.

Bake for 15–20 minutes until pastry is golden brown and puffed.

Serve with a sprinkle of powdered sugar!

Roasted Cinnamon-Ginger Delicata Squash

I love butternut squash but I do not like opening them.

Delicata squash to the rescue.

The outer skin of butternut squash is so thick and they’re so rock-hard that even slicing it in half is much easier said than done. I feel like I could easily lose a limb with the machete-sized knife I need to use in order to hack through it and I have to wind-up as if I am swinging my knife like a baseball bat at home plate, just to enable my knife to initially pierce the concrete-like exterior. And yes, I have very large and sharp knives, but I still struggle.

Delicata squash is much easier to cut and work with raw, compared to much harder butternut squash. Cooked delicata is slightly sweet, not fibrous or stringy, and reminds me of roasted sweet potatoes. The warming spices used in this recipe complement the soft interior and slightly crisped exterior of the roasted squash.

Every Thanksgiving, we travel about three hours North to go and spend the holiday with my family.

It’s a trip with two little kids in the backseat, but as long as they have something to keep them occupied, it isn’t too bad. My mom and dad always serve a huge, traditional spread of food. That’s what helps keep me sane on the ride there I think. My parents still live in the same house that we grew up in. It’s cozy, but it’s small. They have one tiny oven to make the whole meal in.
